Remove the vanilla ice cream from the freezer and let it sit at room temperature for 5-7 minutes until slightly softened but not melted.
Place 12 chocolate wafer cookies flat side up on a parchment-lined baking sheet. Scoop about 1.5 tablespoons of softened ice cream onto each cookie, then gently press a second wafer on top to create a sandwich.
Immediately after assembling each sandwich, roll the exposed ice cream edges in the patriotic sprinkles until fully coated.
