  • 4 tbsp unsalted butter melted
  • 3 tbsp honey preferably raw
  • 4 cloves garlic minced
  • 1 tbsp olive oil extra virgin
  • 1 tsp fresh thyme leaves plus extra for garnish
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 tsp red pepper flakes optional, for a hint of heat
For Garnish
  • 1 tbsp fresh parsley chopped
  • 1 tsp sesame seeds optional

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a small bowl, whisk together the melted butter, honey, minced garlic, olive oil, thyme, salt, black pepper, and red pepper flakes (if using) until well combined.
  3. Place the carrot sticks in a large bowl. Pour the honey garlic butter sauce over the carrots and toss thoroughly until every piece is evenly coated.
  4. Spread the carrots in a single layer on the prepared baking sheet, ensuring they aren't crowded. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the carrots are tender and caramelized around the edges.
  5. Remove the carrots from the oven. Transfer them to a serving bowl. Drizzle with any remaining pan juices, then garnish with fresh parsley and sesame seeds (if using). Serve immediately while hot.
