Ingredients
  

For the Wings
  • 3 lbs chicken wings, split into flats and drumettes patted very dry
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
For the Buffalo Sauce
  • 1/2 cup Frank's RedHot Original cayenne pepper sauce
  • 1/3 cup unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce optional
For Serving
  • 1 cup blue cheese dressing
  • to taste crumbled blue cheese optional garnish
  • as needed fresh chives, chopped for garnish
  • as needed celery sticks for serving

Method
 

  1. Preheat oven to 425°F (220°C). Pat chicken wings extremely dry with paper towels. In a large bowl, toss wings with baking powder, salt, and pepper until evenly coated.
  2. Place wings skin-side up on a wire rack set over a foil-lined baking sheet, spacing them apart. Bake for 20 minutes, then reduce oven temperature to 400°F (200°C) and continue baking for 20–25 minutes, or until wings are deep golden and skin is blistered and an instant-read thermometer inserted into the thickest part of the wing (without touching bone) registers 165°F (74°C).
  3. While wings bake, whisk together the hot sauce, melted butter, honey, garlic powder, and Worcestershire sauce (if using) in a small bowl until smooth. Set aside.
  4. As soon as wings come out of the oven, transfer them to a large clean bowl. Pour sauce over wings and toss until evenly coated. Pile onto a platter, sprinkle with chives, and serve immediately with blue cheese dressing and celery sticks.
