Ingredients

Wings
  • 2 lb chicken wings flats and drumettes separated, tips removed
  • 1 tbsp baking powder NOT baking soda
  • 1 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
Buffalo Sauce
  • 1/4 cup unsalted butter melted
  • 1/4 cup hot sauce such as Frank's RedHot
  • 1 tsp white vinegar
  • 1/4 tsp garlic powder

Method

  1. Preheat air fryer to 400°F (200°C). Pat chicken wings thoroughly dry with paper towels. Toss wings in a large bowl with baking powder, salt, and pepper until evenly coated.
  2. Place wings in the air fryer basket in a single layer, leaving space between each piece. Cook for 10 minutes.
  3. Flip each wing using tongs. Increase temperature to 420°F (215°C) and cook another 10–12 minutes until skin is deep golden and blistered. Ensure the internal temperature of the thickest part of the wings reaches 165°F (74°C) before removing.
  4. While wings cook, whisk melted butter, hot sauce, vinegar, and garlic powder in a small saucepan over low heat until warm. Keep warm off heat.
  5. Transfer cooked wings to a clean large bowl, pour sauce over, and toss until well coated. Serve immediately with celery, carrot sticks, and dip.
