  • 1.5 lbs bone-in, skin-on chicken thighs about 4 thighs
  • 2 tbsp olive oil
  • 1 large yellow onion diced
  • 3 medium carrots peeled and sliced into rounds
  • 3 stalks celery sliced
  • 3 cloves garlic minced
  • 8 cups low-sodium chicken broth
  • 2 cups wide egg noodles dry
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

  1. Pat chicken thighs dry, season generously with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Place thighs skin-side down and cook until deep golden brown, about 5-6 minutes. Flip and cook 3 minutes more. Transfer to a plate.
  2. Reduce heat to medium. Add onion, carrots, and celery to the same pot. Cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook 30 seconds until fragrant.
  3. Return chicken thighs to the pot. Pour in chicken broth, add thyme and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer gently until chicken is cooked through and tender, reaching an internal temperature of 165°F (74°C), about 20 minutes.
  4. Remove chicken from the pot to a cutting board. Let cool slightly, then discard skin and bones. Shred meat into bite-sized pieces using two forks.
  5. Bring the broth back to a boil. Add egg noodles and cook according to package directions (about 6-8 minutes) until just al dente. Stir in shredded chicken and simmer 2 minutes to heat through.
  6. Remove bay leaves. Taste and adjust seasoning with salt and pepper. Ladle into bowls, sprinkle with fresh parsley, and serve immediately.
